香蕉雜果蛋糕/麥芬

牛油                                                             butter                                200g
砂糖                                                             caster sugar                     120g
大雞蛋                                                         large eggs                        4pcs
熟香蕉(攪爛)                                        banana (mashed)           2pcs
低筋麵粉                                                     cake flour                         300g
奶粉                                                             milk powder                     1tbsp
蘇打粉                                                         baking soda                      1tsp
發粉                                                             baking powder                 1tsp
幼鹽                                                             table salt                            1/4tsp
雲尼拉香精                                                 vanilla extract                  1tsp
香蕉精                                                         banana extract                 1tsp
冧酒                                                              rum                                    1tsp
葡萄乾/紅果乾                                           raisins/cranberry            1/4cup
蜜餞果皮                                                     sweetened mixed fruits  1/4cup
核桃                                                             walnuts or pecans            1/2cup

製法:
1,預先放牛油於室溫至軟,用打蛋器打至鬆軟,加砂糖打勻至呈奶白色。
2,雞蛋分開蛋黃和蛋白,用打蛋器充分打起蛋白。
3,蛋黃逐隻放入牛油繼續打,加入攪爛的香蕉,雲尼拉香精,香蕉精打勻。
4,麵粉,奶粉,蘇打粉,發粉和鹽撈勻過篩,分幾次加入牛油混合醬料裏輕輕拌勻。
5, 然後加入打起的蛋白,輕輕拌勻。
6,葡萄乾,果皮和核桃用冧酒略略拌勻放入蛋糕模。
7,預熱焗爐至180度C,視乎蛋糕模大小,焗45至50分鐘即可。取出後攤涼半小時享用。


Method:
1, butter placed in room temperature till soft, beat with sugar till creamy.
2, separate egg white and yolk, beat egg white thoroughly till firm.
3, add egg yolk one by one into the butter mixture,continue beating.
4, beat in mashed banana, vanilla ext and banana ext.
5, mix and sift flour, milk powder, baking soda, baking powder and salt.
6, gently fold in the dry ingredients to the butter mixture.
7, gently fold in the egg white. Spoon the mixture into the mould.
8, marinate raisins,fruit and walnut with rum and fold into the mixture.
9, preheat oven to 180C/375F, and bake for 45~50min dependant on the size.
Cool off for 30min before serving.
Note: Do not over stir the flour and egg white
